Yumm-o!

Last night's dinner was too good to not share! Nothing super hard but super tasty!!!

Turkey Meatballs
1 lb of lean ground turkey
1/4 cup parmesean
1/4 cup of italian breadcrumbs
Few dashes of parsley
1 egg

Combine & form in to meatballs (14-16). Bake at 400 for about 20-25 mins (until juices are clear.)

With it, I made Katie's Creamy Fettucine Alfredo. It was super yummy but the sauce was a tad thick for us. I used cream cheese instead of the Laughing Cow. Next time, I'll add a bit more milk & a tad less flour.

It's a hubby successful meal! Only a few meatballs leftover!

Lions & Tigers & Bears.....

Come on....you know you said "oh my!" This weekend we are hanging with Kevin's brother & his family again doing a day at the zoo! For those of you that know my last name, I coordinated the email with the subject line "B's do Brookfield." lol Clever, eh?

We are heading to Brookfield Zoo in the Chicago area which is only about an hour away. I really love living so close to the "big city." All the benefits with none of their insane taxes!

Last weekend, we were at the lake with them as well. My goal was to enjoy our time, float in the lake (check) with adult beverage (check) & get some sun (check x10.) I was crispy & have now started peeling! I look like I have dandruff on my head! The only thing not planned was gouging my toe on a sharp rock (check) but that's doing better too! Good news is I was a little too tipsy to realize 1) how bad it was & 2) how bad it really hurt! Oops!

This week also marks the 4 year anniversary of my Mom's passing so I've been having a tough time. I still see things as they transpired by the day rather than the date for some reason. My best friend, her little guy & her nephews brought me a lovely arrangement of flowers on Tuesday (actual date) that definitely put a smile on my face. In fact, in terms of days, today actually marks her passing. I will cherish my Mom forever. She was my closest friend & we talked several times a day. I try to live my life to the fullest knowing that's what she would want for me & work hard to avoid the mistakes that ultimately led to her death. That really ties in with things I'm working through with a friend.

As for those things, I'm taking time to work on me. In doing that, I'm reading more (just starting Girl with the Dragon Tattoo), working with a friend on getting back to my happy place physically (more on that sometime) & really just regaining my "best life." Oh what a tease that must be...hahaha ;)

8) Remember set backs happen & those do not translate into failure
9) When I fall, always stand up & never stay down
10) Remember what works for me, may not work for someone else & may not work for me again.

Sooooooo.

What do you want to hear? Mad ramblings? Sad stuff? Whining? I could give you all three if you'd like. Let's do it this way....

1) 4 years ago yesterday started a chain of events that would forever change my life. I was running to lead the Rookie Running program at my old job. I was late, literally running there & had to go. She pulled in my driveway (she was supposed to be at Tai Chi (yes, really) down the road. She told me she didn't feel good & after numerous calls to her doctor & 20 questions with Mom she finally admitted that she felt like she did when she had her first open heart surgery nearly 13 years prior. I drove her to the hospital & things were never the same. Mom was admitted & found to have had a mild heart attack. They kept her & finally did an angiogram on Friday sadly learning that she had 4 arteries that were completely blocked. Tears were shed, surgery was eminent but they couldn't do it for a couple days due to the Plavix she was on. Doctor's move? Send her home to enjoy the weekend with her family. We had NO idea what would transpire on Monday morning when they took her into surgery. The last thing my Mom said to me was "oh please don't cry, I'm so not done with you yet."

That's all I can write about that for now. The tears are flowing enough.

2) I'm still doing Insanity & loving the program. It's so intense, brutal but so kick ass quite frankly. I'm doing it 3-4 days a week but after this morning's super intense 20 min elliptical session, things are going to change up just a bit.

3) Kevin asked me last night if I'd found the scale (LOL.) Why yes, I did but totally by accident. While I know that I'm shrinking (hips & tummy down an inch), I'm really not comfortable with the number that I see on the scale. I'm not letting it ruin my day, starving myself, going carb free or any other stupidity that could ensue but I will say that I'm concerned. I would be lying if I didn't say that I feel a bit fluffy even knowing that things are shrinking. My clothes still fit, etc but I do want to drop some weight. Not sure how totally to approach it other than to continue to eat. A concern truly is that I might just not be eating enough for the activity. I'm doing my training & doing either Insanity or running for cardio around 5 days a week.

My new thought is this.....20 mins of balls to the wall cardio on training days then Insanity or running on cardio only days. Then my body is getting a little more variety. My body shuts down if I do too much or the same thing. So this will shake it up a bit & make sure I'm not overdoing. Plus, it felt really good to rock out an uber sweaty session this morning.

Insanity (take 2)

I thought I'd update on Insanity & all it's madness! I had initially started, got a week or so into the program & we left for the holiday weekend. So last week I restarted the program. Now I'm not following it like it's intended to be & am just doing it solely for my cardio while still doing my weight training. That amounts to about 4 days a week. I'm still LOVING it!!!!! It's so intense, so brutal but SO fun! Yea, really. It's fun. The circuits are fast & the workout is done before you know it. On tap for today is Plyometric Cardio Circuit. Here's a video I found on Youtube of someone doing it. Enjoy.....



And yes, it's THAT intense! After the end of Pure Cardio, Shaun T (as he's laying on the ground) actually says himself "that shit is bananas yo..." No joke!

Now, I feel every ounce of fluff bouncing as I do this but I will say that I can see some improvements already especially in my midsection (AKA my nemesis.) I'll take it!!!!

Mmmmmm.

Just a random post. I read a lot of blogs & most of them are foodie blogs. I tried to do the whole "look at my food" blog but failed. Mostly just seems monotonous to photograph every morsel that I eat.

But for curiosity sake, here's what lunch is today....

Cedarlane Bean & Rice burrito
3 Medjool dates with almond butter (swoon!)
A couple ounces of RF colby jack

Oh & a Diet Pepsi.

Lunch of champions? Well, I have all the food groups covered, a good amount of protein with the bean burrito & cheese and some good fats with the almond butter.

I'll burn a little of it off doing Insanity after work!
